Now That i have started my 30 day healthy Lifestyle, i wanted to share some of my favorite recipes that are fast easy and low carb…Tuna for me is my Go to snack. My mom hates tunafish but makes me the best tasting.. Go figure.
I got this recipe from the food network it basically is the same.
Two 6-ounce cans white meat tuna packed in water, drained
2 tablespoons minced celery
2 tablespoons minced red onion, soaked in cold water for 5 minutes and drained
1 teaspoon minced flat-leaf parsley
1/3 cup prepared mayonnaise
1 tablespoon whole-grain mustard
Freshly ground black pepper
Freshly squeezed lemon juice
(my mom uses a dab of red wine vinegar) Mix this all together in a bowl and put into lettuce cups
If you like spicy, i also use a dab of Tabasco
I love Roasted veggies…I think they are even better cold the next day… here is another recipe i got from the food network
1 small head cauliflower (2 pounds), cut into florets
2 large stalks broccoli (1 pound), cut into florets
1 head garlic, broken into cloves
2 tablespoons olive oil
1/2 teaspoon salt
Preheat the oven to 375 degrees F.
Place cauliflower and broccoli into a 9 by 13 inch baking dish, toss with the olive oil, and sprinkle with salt. Cover the dish and bake for 1/2 hour. Remove the cover, stir and cook for 30 to 40 minutes more, until vegetables are tender and nicely browned, stirring occasionally.
